Cauliflower Kale Soup

cauliflower, medium head (about 4 cups)
2 cups vegetable broth
3/4 cup almond, coconut, nut or hemp milk
1T coconut oil
1 yellow onion, diced
2 cloves garlic, minced
juice of half a lemon
1 tsp dried parsley
1 Tbs nutritional yeast
1/2 cup of kale
sea salt and pepper to taste

1. Steam the cauliflower and kale until soft but not mushy. Set aside.
2. Sauté onion and garlic in oil until soft.
3. Combine all ingredients in Vitamix or high speed blender until creamy smooth.
